Vegetarian “meatballs” In A Spicy Sauce

Meatballs without meat, is that possible? Everyone will immediately think of soy mince and complicated preparation, but cooking vegetarian is neither complicated nor unusual ingredients.

Meatballs without minced meat?

Meatballs don’t always have to be made from ground beef, as the ground beef can be replaced with many other minced ingredients.

Meatballs are of course a classic with meat, but you should try to cook classic dishes in a vegetarian version.

Vegetarian cuisine is healthier, cheaper and better for the climate. Compared to real meatballs, you are not only doing something good for yourself with vegetarian meatballs, but also for your wallet and the climate!

Meatballs recipe

Depending on the size, the recipe makes about 20 to 25 meatballs. For example, if you serve rice with it, the recipe can be enough for 4 people.

Serve with the hot sauce listed below and enjoy the meatballs!

You need:

  • 1 medium onion
  • 2 cloves of garlic
  • 3 eggs
  • 50g chopped nuts
  • 100g oatmeal
  • 1 pack of wholemeal toast
  • 100g grated cheese
  • Salt, pepper, warm water and spices to taste
  • Roast olive oil

If you don’t have dry toast, simply lay out the slices of the packet on the countertop or on a table near the heater at least overnight so that they become dry and crumbly. You can also toast each slice before continuing to use it.

Chop up oat flakes and wholemeal toast to coarse flour, similar to breadcrumbs. This works well with the food processor, stand mixer, blender or other kitchen appliance in which a knife rotates quickly.

Then crack open the eggs and add them to the oatmeal breadcrumbs to form a malleable dough. Depending on how dry the bread was and how big the eggs, add a little more warm water until the consistency is right.

Chop the garlic very finely and cut the onion into small cubes. Then add the garlic, diced onion, nuts, cheese and spices to the mixture and stir everything in well. Then shape meatballs of equal size with your hands.

Heat the frying olive oil in a pan. Then fry the meatballs in the hot oil until they are crispy all over and cooked inside.

Keep turning and flipping the dumplings so they stay round and cook all over the place. Pour hot sauce over them and serve. Rice goes well with it.

Vegan variant

This recipe can also be made vegan. All you have to do is modify the ingredients a little:

  • 1 medium onion
  • 2 cloves of garlic
  • 50g chopped nuts
  • 100g oatmeal
  • 1 pack of old wholemeal white bread
  • 5ml soy sauce
  • Warm water
  • 100g finely chopped spinach

The preparation of the vegan meatballs is exactly the same as described above, but you should first fry the onion cubes with the garlic in a little olive oil and only then add them to the dough to bring some toasted aromas to the balls.

If you roast the oatmeal before chopping it and the chopped nuts before using, the balls will be even more aromatic.

Spicy sauce

It’s up to you how spicy the sauce will be, of course, but it can be a bit fiery if you pour it over your balls. You need:

  • 5 tomatoes
  • Fresh chili peppers to taste
  • 3 cloves of garlic
  • ½ small onion
  • 300ml vegetable stock
  • Pepper, salt, fresh herbs or spices of your choice

First, this sauce is prepared cold and then boiled. Cut tomatoes, onions, and garlic into small pieces and put them in a blender.

If you have a hand blender, that works too. Then pour the vegetable stock over it and puree everything into a sauce.

Then boil this sauce up and let it reduce as desired. Then season with herbs and spices and pour this sauce over the meatballs. Good Appetite!
