When we decided on these recipes, we made sure that they were tasty and of the best quality. As you will see in a moment, you don’t need eggs, milk, butter or other animal products for these treats , so you get a sweet dish that you can eat even if you are vegan!

1. Vegan cheesecake

This cheesecake uses vegan cheese or soy yogurt instead of dairy and tastes great!

In fact, you could say this is more of a yogurt cake as we took the cheese out and replaced it with soy yogurt. Of course, you can also make your own vegan cheese and use it instead of soy yogurt.

ingredients

  • 200 ml of plant milk
  • 340 g soy yogurt
  • 1 tablespoon of agar-agar powder
  • 3 tablespoons of lemon
  • 12 sponge fingers (alternatively also shortbread biscuits or wholemeal biscuits)
  • 2 tablespoons of margarine
  • Jam (of your choice depending on taste)

preparation

  • First, make the floor. To do this, crumble the biscuits with a rolling pin or food processor, then set them aside.
  • The next step is to melt the margarine in the microwave and pour it over the cookie crumbs. Mix the two ingredients well.
  • Then grease the pan with margarine and then add the cookie and margarine mixture to form the bottom of your cake.
  • Now dissolve the agar in cold milk and bring the mixture to a boil over medium heat while stirring.
  • Then work the yogurt and lemon juice into the mixture and whisk everything until you get a smooth mixture.
  • Pour the creamy mixture onto the biscuit base and chill the vegan cheesecake in the refrigerator for at least half an hour.
  • Finally, pour the jam over it and put it back in the fridge. Voilà!

2. Vegan Treats: Chocolate Banana Muffins

Use extra virgin olive oil to replace the butter and make vegan muffins.

For this recipe, you can use plant or almond milk to make fluffy muffins. Of course, you can also add vegan chocolate chips or raisins if you want.

ingredients

  • 125 ml almond milk
  • 4 ripe bananas
  • 340 g whole wheat flour
  • 1 ½ teaspoon of baking powder
  • 100 g coconut blossom sugar
  • 65 ml of extra virgin olive oil
  • 1 teaspoon vanilla essence (optional)
  • 80 g chocolate chips or raisins (optional)

  • First preheat the oven to 190ºC.
  • Then, sift the flour and baking powder into a bowl and mix the ingredients well together before setting them aside.
  • In the next step, mix the almond milk with the bananas.
  • Then add the milk and banana mixture to the bowl with the flour and mix the ingredients well.
  • In the next step, work the oil, sugar and vanilla essence into the dough and stir everything to a smooth mass.
  • Then fill the batter into greased muffin cups and pay attention to it. Do not fill them more than 2/3 full.
  • If you want, you can add the vegan chocolate chips or raisins at this point.
  • Finally, bake the muffins in the oven for about 20 minutes.

  • 60 g of oatmeal
  • ½ banana
  • 5 large strawberries
  • 2 tablespoons of peanut butter
  • 1 tablespoon of honey

preparation

  • First, preheat the oven to 200ºC.
  • Then, in a bowl, mash the banana and mix it with the peanut butter before incorporating the honey.
  • Then add the oatmeal and mix the ingredients until you get a homogeneous mass.
  • Then dice the strawberries and add them to the oat mixture.
  • In the next step, prepare a baking sheet that you line with parchment paper.
  • Form small balls of dough out of the dough and press them out on the parchment paper so that they get a biscuit shape.
  • Bake until golden brown for 15 minutes.

4. Apple pie

Ingredients for the dough

  • 140 g whole wheat flour
  • 70 g flour
  • 60 ml of extra virgin olive oil
  • 80 ml of lukewarm water
  • ½ teaspoon of salt

Ingredients for the filling

  • 4 red apples
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons of whole wheat flour
  • 2 tablespoons of brown sugar
  • Brown sugar for sprinkling (optional)
  • To coat: almond milk (optional, you can use as much as you need)

Preparing the dough

  • First, preheat the oven to 200ºC.
  • Then mix the dry ingredients by placing them in a bowl.
  • Add the olive oil, then knead the dough with your hands until it is grainy.
  • In the next step, add the water and continue kneading until a soft dough forms.
  • Then divide the dough in two.
  • Now butter and flour a cake pan with a diameter of 20 cm.
  • Now you can roll out the dough and put it in the mold.

Preparing the filling

  • Wash and peel the apples first before you cut them into small cubes.
  • Then add the sugar and flour to the apples and mix the ingredients well.

This is how you finish the apple pie

  • First, pour the apple filling mixture onto the batter.
  • Then roll out the second half of the dough that you set aside earlier and cover the cake with it.
  • You can also roll out the other half of the dough and cut it into strips and create a simple design (like in the picture above).
  • To coat, brush with almond milk and sprinkle with a little brown sugar.
  • Then bake the apple pie for about 50 minutes, until it is crispy and golden.
